Mediterranean Chickpea Salad
A healthy and colourful salad recipe that is quick, simple and tasty and goes well with any dish. This salad works for anytime of the salad and is sure to satisfy and hungry tummy!
This recipe is great because it uses a few ingredients but still packs a bunch in terms of flavour, and how colourful it is is an added bonus! Feel free to add more colouful vegetables to really make this dish stand out. Some good ideas are diced cucumbers, green peppers or red onion. You can soak your diced onion in some warm water for about 5 minutes to remove some of the sharpness onions possess.
Make sure to stir gently with a spoon when combining the ingredients so as to not crush the chickpeas. Adding a creamy salad dressing or some plain yoghurt will really compliment this salad recipe.
