Egg Fried Rice
This recipe is great for any leftover rice you may have. It's bright and vibrant but also full of flavour and goes well with almost any dish. A bonus is that it's vegetarian friendly! There isn't much to say with this recipe because it really does speak for itself.
Feel free to add as much vegetables as you like because this recipe is great to pack in some of your 5 vegetable portions for the day. Experiment with different spices to bring out different flavours in your rice.
The secret is using cold rice, and that's why using leftover rice that has been in the fridge works out so great. If you don't have any leftover rice, here is a trick you can use with freshly cooked rice:
Take a batch of freshly cooked rice and spread it out on a oven tray or any large flat pan. Cover the rice with some cling film/plastic wrap and place it in the freezer for 10 - 15 minutes until its thoroughly chilled (not frozen!)
