I highly recommend using sour cream, natural yoghurt or your favourite sauce like BBQ sauce or mayonnaise to add some moisture to the quesadillas.
Chicken breast can be quite dry when its cooked (I usually use leftover chicken breast from a roast chicken) so its important to add something to cut the dryness. Fresh herbs like parsley or coriander also add a wonderful fresh flavour to the quesadillas. Be creative with this recipe and most importantly, enjoy it!
