Carrot Cake Cupcakes

Soft and moist spiced cupcakes with a cream cheese filling in the middle.

This cupcake recipe has quickly become one of my favourites because of how easy it is to make and how delicious the cupcakes come out! The cupcakes are moist and subtly spiced, leaving a wonderful warm spiced scent in your kitchen!

I love taking this simple recipe to the next level by filling it with a simple cream cheese filling the the middle. This adds depth to the cupcake and also makes each bite deliciously moist. This cream cheese filling however is completely optional and can be omitted if you are looking for a slightly healthier option.

Icing the cupcakes is also optional and is great if you would like a little bit of extra sweetness. I like icing my cupcakes to make them look pretty and stand out more using cream cheese frosting in a simple ziplock bag with a small slit cut at the bottom. Top the cucpakes with some caramel chunks or chocolate shavings.

This recipe is fantastic if you want to treat yourself to a delicious treat, and is even better to share with friends and family on special occasions!
