These muffins are great for a quick weekday student breakfast, as a morning or afternoon snack, or as dessert after dinner! The recipe can easily be doubled or tripled for big occasions as well.
The key with this recipe is to NOT OVERMIX! Do not over mix the batter! If the batter is mixed too much it will result in dry, dense, and possibly rubbery muffins.
Expect the muffin batter to be very thick. Once you can no longer see any dry ingredients in the batter, you have mixed enough!
