Banana bread is perfect for very ripe bananas. The riper the better, literally. Riper bananas are
easier to mash up and make the bread more moist. If you use bananas that are not soft enough, your dough may end up quite dry. If your dough is on the drier side, add a tablespoon or two of milk to it. Make sure not to over mix your dough with this recipe or it will result in chewy and dense bread. The dough is fine if there's still some small lumps of dry ingredients.
